Thanksgiving should be a celebration of local, seasonal foods like squash, sweet potatoes, chestnuts, cranberries, and, of course, turkey! Entree Side Dishes:
Herbed Butternut Squash and Brussels Sprouts with Chestnuts
Honey-Sweetened Cranberry Sauce
Mashed Sweet Potatoes
Serves: 4 to 6
- 2 lb sweet potatoes, peeled and chopped into large wedges
- 1 sprig fresh rosemary
- 2 cloves whole garlic, peeled
- 2 tbsp coconut oil
- 2 tsp sea salt
- 1 tsp black pepper
1. Fill a steamer pot with water and bring it to a boil. Place the sweet potato, garlic, and rosemary into the basket and let steam with the lid on until the potatoes are very soft, about half an hour to 45 minutes.
2. Remove the rosemary sprig and garlic cloves, and transfer the potatoes into a large bowl. Add the salt and pepper, and let the coconut oil melt over the hot potatoes. Mash with a hand masher, large fork, or whisk until smooth. You can also use a hand mixer if you have one. Test the seasonings and add more coconut oil and salt/pepper if needed. Enjoy, and happy Thanksgiving!
